How to make Garlic Mayonnaise (Easy Mixi-Jar Recipe)

You make delicious Garlic Mayonnaise, in 5 minutes, using your Mixi-Jar.
A Mixi-jar to those not familiar with this term is the smaller blender -grinder, jar that comes along with your blender. It is a very common term used in Asia, especially in the Indian sub-continent.

Ingredients:
Sunflower oil | 3/4 -1 cup | |
1 | Egg white, at room temperature | |
Garlic | 2 large cloves | |
Vinegar (use 3/4 Tbsp here if using 3/4 cup oil &1 Tbsp is using 1 cup oil) | 3/4- 1 Tbsp | |
Salt | 1/4 tsp | |
Black pepper | Large pinch | |
Ice water | 1 Tbsp |
Method:
- Start off by making sure the mixi-jar is absolutely dry.
- Add the (white only) of one egg.
- Add two large cloves of garlic.
- Add salt and pepper.
- Pour in 1/4 cup only of the oil. Or even less than that.
- Close the mixi jar and run on speed setting 2. Not the highest or lowest speed. Just run till you see the mixture turning white.
- Open. You will see it has turned white but is still very liquidy.
- Add another 1/4 cup of oil as well as vinegar, depending on the amount of oil being used (3/4 Tbsp for 3/4 cup total oil OR 1 Tbsp vinegar for 1 cup total oil).
- Close the mixi-jar and run again briefly till thickened. Open again. It should be a more creamy texture now now.
- Add the next addition of oil and run again briefly. Open. Now you will see the sauce is quite thick this time.
- Add the last addition of oil and run again briefly. Open. The sauce is the right consistency but may have a slightly oily residue on top
- Add the cold water and stir through with a spoon. Close the mixi-jar and run for just a few seconds again.
- You Garlic Mayo is ready. Chill for 30 minutes, and it will set thicker, before using. Makes 1 cup.
How to make Garlic Mayonnaise (Easy Mixi-Jar Recipe)
Notes:
- Don’t use too much garlic here, to avoid tongue burn. 2 extra-large cloves is perfect.
- I always get the best results with sunflower oil. However, canola, vegetable, rapeseed oils are also used.
