Garlic Green Beans Chinese Stir Fry
A simple and delicious side dish that features crisp-tender French beans stir-fried with garlic and soy sauce. The video features two recipes.

Ingredients:
French beans, strings removed, cut into 2-inch lengths | 400 gms | |
Garlic, chopped or pounded | 2 large cloves | |
Red chili, sliced | 1 long /mild | |
Oil(sunflower oil /vegetable oil) | 2-3 Tbsp | |
Salt | 1/2 tsp (or to taste) | |
Sugar | 1 tsp | |
Light Soy sauce | 1 Tbsp |
Method:
- Bring a saucepan of lightly salted water to a boil
- Add the chopped beans and cook just under a minute, till blanched and the beans turn bright green.
- Quickly drain and plunge the beans into cold water to stop the cooking process and also preserve the color.
- Heat the oil in a wok and add the garlic. When fragrant and before changing in color, add the beans and chilli.
- Stir fry for just under a minute.
- Add the salt and sugar and stir just till the sugar dissolves.
- Add soy sauce and stir fry for just under a minute more, till the beans are perfectly crisp-tender.
- These beans may be served hot or cold. We love it along with steamed rice or bee hoon.

Notes:
- TAKE CARE not to overcook the beans. Beans are blanched in just under a minute and cooked on high heat for about two minutes. They should stay crisp but tender.
- Young, tender smaller beans can be left whole, or cut into half.
- Long Beans(snake beans) may be used here also.
