Adalat was our lovely Egyptian neighbor at the SSOC compound in Dhahran. I was friends with her daughter, Dina, and son, Sherief. I hope to find them someday, perhaps through this post. This recipe is something she once showed my mother in the late ’80s. Shakshouka meets Ful Medames.

Ful Medames Shakshouka
Description
Ful Medames Shakshuka is a hearty, flavorful fusion dish that combines two distinct and beloved Middle Eastern and North African breakfast staples into one substantial skillet meal.
It is essentially the classic poached eggs-in-tomato-sauce dish, Shakshuka, given an extra rich, earthy, and protein-packed foundation by incorporating Ful Medames (stewed fava beans).

Heat oil in a skillet. Add the onions and saute briefly

Next, add garlic and saute till onions are translucent and garlic is cooked. Add a little salt and pepper.

Pour in the fresh/canned tomato. Mash and bring to a simmer.

Add the cooked/canned fava beans. Cook for 10 minutes, till the tomato sauce is thickened and the beans are cooked tender. Mash the beans a little as they are cooked. Add a little water as needed if the dish is becoming dry. You should end up with a thick but wet sauce with chunky mashed beans.

Add the Harissa powder to the sauce and add salt as needed.

Next, add the marinated chipotle pepper and mash it into the sauce, and stir it through.

Make indents in the sauce, using a ladle, and crack an egg into each, gently.

Cover and simmer till eggs are soft-set.

Halfway there, add the grated cheese to the sauce, where there is no egg.

Keep the yolks runny! Garnish with chopped parsley.

Serve with any kind of warm or toasty bread.
Note
- Baked beans may be used here, but the flavor is entirely different. Fava beans are heartier and not as sweet as canned baked beans.
- Although Harissa spice powder is used in this recipe, you could replace it with Harissa paste too. Here is my recipe for Harissa paste.
- 'Chipotle peppers in Adobo sauce' is my preferred choice for marinated Chipotle here.
- If I don't have Harissa powder, I use Berbere spice mix is just ground cumin, coriander, chili/paprika, black pepper, and caraway powders- to taste.
