(The fruits used in this recipe are Apple(1 -2 sweet apple) , Banana (1) , Strawberry(4-5), Mango (1 cup, diced), Seedless Grapes  (1/2 cup), 1 small mandarin orange, Golden Kiwi(1-2) )

Fruit Custard (Indian Mixed Fruit Salad)

Ingredients:

Instructions

  1. Add the custard powder and sugar to a small bowl.
  2. Take 4 Tbsp from the 3 cups (pre-measured) milk and add it to the bowl also.
  3. Stir well and set aside.
  4. Add all the remaining milk to a saucepan. Bring to a boil, and just before boiling, stir and add the custard-milk mix.
  5. Stir on medium heat from the bottom of the pan, till thickened. Remove from heat. Stir in the vanilla extract.
  6. Once cooled off a bit, refrigerate for around 6-8 hours till very cold.
  7. Chop/ dice all fruits to a similar size. Add banana, only before serving.
  8. Pour the cold custard over the fruits. Toss.
  9. Crush or roughly chop the cashew nuts and add them on top of each individual serving. This adds a lovely cashew-creamy bite!
  10. For those who like it, they can add a small scoop of Vanilla ice cream while serving.

Note

  • Glace cherries may be added. I add them when I don't have red fruits. Make sure you are using good-tasting glace cherries without syrup.
  • Other popular fruit choices are pomegranate, papaya, and pineapple.
  • Seedless grapes of different colors may be used.
  • Make sure all your fruits are sweet and not too sour. Always taste before you add them to your custard.
  • 1-2 teaspoons of Chia seeds or Basil seeds, soaked in water may be added if you like.
  • 3 Tbsp sugar makes the Custard mildly sweet. 4 Tbsp is sweeter. Add sugar to taste.
