Fried Tuna & Egg Pepper Lunch – Super Quick EATS

Canned tuna and Eggs, is Super  Quick eats.  Put the rice on to cook as you start, so you can enjoy this fast hot Fried Tuna & Egg Pepper Lunch in no time at all!

Ingredients:

Flaked Tuna in Oil(sunflower oil) 1 can
Eggs 2
Garlic, minced 2 Cloves
Yellow Onion(Vidalia), sliced Half of one
Sunflower oil 2-3 tsp
Spring Onion Greens, chopped (or use any fresh herbs you like) 2 Tbsp
Salt and Coarse  Black Pepper As needed
White steamed Rice(Thai /Jasmine) for serving 2 portions




Method:

  1. Rinse 1 cup of rice and start to cook it, so that it’s ready in time.
  2. Open and drain the oil out the canned tuna.
  3. Heat some oil in a small nonstick frying pan.
  4. As the oil heats up, add the minced garlic and fry till there is a slight change in color.
  5. Add the sliced onions and saute them till they soften and begin to turn golden.
  6. Add the drained tuna and fry the tuna along with the sauteed garlic and onion.
  7. Fry, whilst stirring for one or two minutes. Don’t fry too long, or the tuna will go hard.
  8. Once the tuna is fried to your liking,  add a little salt and pepper and stir through.
  9. Move the fried mixture to one side of the pan.
  10. Add a tiny bit of additional oil and allow it to heat up a bit.
  11. Crack in the eggs. Allow them to set a bit before you start to gently scramble on a low heat.
  12. Add a little salt and pepper to the eggs and keep scrambling till they begin to set a bit more.
  13. Now begin to fold in the scrambled eggs, into the fried tuna mixture on the side.
  14. Turn up the heat and fry the tuna and scrambled egg mixture, till its well incorporated and looking yummy!
  15. I like to get the tuna a little crisp, just around the edges.. not too much.
  16. Lastly, stir in the chopped spring onion greens.
  17. Serve immediately alongside the hot steamed rice! Enjoy your Super Quick Eats!

Notes:

  • Tuna flakes in oil are preferred since we will be scrambling the tuna with the eggs anyway. Chunks may take longer.
  • Tuna in sunflower oil works best here. Tuna in olive oil may have an overpowering taste when fried with the egg unless you like that.

Key Ingredients: Tuna, Eggs, Garlic, Onion, Spring Onion Greens, Oil, Salt, Pepper.
