Fresh Aloe Vera Summer Salad
Totally cooling and nutrient packed salad. A great post-workout salad!

Ingredients:
FRESH Leaf on Aloe vera | 1 good sized, | |
basil seeds, soaked in 3 Tbsp water till plump | 2 tsp | |
, peeled and diced | 1 apple | |
strawberries, chopped | 10 | |
mandarin oranges(seedless), chopped: 1/2 cup | 2 | |
of blueberries | a handful | |
rose water | 2 Tbsp | |
chopped fresh mint | 2 Tbsp |
Method:
- Cut the ridge off of the aloe vera leaf and cut into sections.
- Soak in water for 5-10 minutes.
- Peel away the all the skin with care, as it can be bitter.
- Continue to dice the gel-like flesh.
- Toss everything together well and serve chilled.
- Allow the Fresh Aloe Vera Summer Salad to sit for a few minutes for the flavors to combine. However, make sure you serve quickly: the aloe vera releases liquid if left for some time, and the salad will get runny.

Notes:
- All the fruits I used had good sweetness to them .. If not sweet enough , I recommend a sprinkling of sugar or you could use agave nectar .
- You cold use Chia seeds in place of Basil seeds.
- Other fruits that wold compliment this salad – Pomegranate, Sweet Kiwi, Guava.
Key Ingredients: Aloe Vera, Strawberries, Apple, Orange, Rose Water, Basil Seeds, Blue Berries, Mint Leaves.
