Felafel Wraps

A healthy Vegetarian wrap for lunch or light dinners. Can be made vegan by switching out the yogurt in the sauce for a dairy-free alternative. You can make the recipe easier by buying wraps and pickles or you can go all out and make everything from scratch! Homemade tastes great!

Ingredients:
Pita breads/ khubz | 4 | |
Felafel patties | 8 | |
Arabic pickled Vegetables | A few, per wrap | |
Large french fries (fried/air-fried) | A few, per wrap | |
Tomatoes, quartered | 2 small | |
Parsley / Cilantro /Mint - whichever you like | To taste | |
Tabasco sauce - optional | As needed |
For the Sauce:
Yoghurt | 1 cup | |
Garlic, crushed into a paste | 1 large clove | |
Tahini | 1 - 3 Tbsp | |
Lemon juice, freshly squeezed | 2-4 tsp | |
Salt | To taste | |
Fresh parsley, finely chopped (flatleaf or curly)- optional | 1 tsp |
Method:
For the Sauce:
- Hang the yogurt in a muslin cloth for 30 minutes, no more.
- Add the garlic paste, tahini, lemon juice salt, and minced parsley. Taste and adjust.
- Mix till absolutely smooth.
To Assemble the Falafel Sandwich:
(Pita bread, falafel and fries should be warm. Pickles, tomatoes, sauce, and herbs should be at room temperature).
- Place one khubz/ pita bread on a plate. Spread a good amount of sauce vertically through the center.
- Cut Falafel into two. Place along the pita, 2 falafel per pita .
- Arrange 2-3 french fries, 3 tomato wedges, 2-3 pieces of pickled vegetables, and some fresh herbs vertically over the sauce.
- Drizzle some more sauce over the top.
- Add a few drops of Tabasco sauce.
- Wrap up the sandwich tightly with sandwich paper or foil.
- To reheat, place in the microwave for 7 seconds.
