Feel Better Soup
Description
A therapeutic soup, specifically for those days when you or a loved one is feeling under the weather. It is the culinary equivalent of a warm blanket—intentionally simple, non-greasy, and incredibly easy to digest. This clear, soothing broth is built on a base of aromatic chopped ginger and garlic sautéed in just a hint of oil to release their natural cold-fighting properties. Unlike heavy, cream-based stews, this soup features clean hunks of potato, diced carrots, and tender chicken breast that simmer together into a light, energizing meal that provides instant comfort without weighing you down.

Heat oil in a heavy-based pot/cast-iron wok.

Add the chopped ginger and garlic and saute till fragrant.

Follow with the onions and saute on high, just briefly.

Next, add chicken cubes and toss on high till the chicken turns opaque/white(no longer pink).

At this point, add the potato and carrot and fry on high for a bit longer.

Add in the stock cube, and break it up using your ladle.

Add plenty of (previously -boiled) water to fill the average-sized stock pot.

Bring to a boil on high, then reduce the heat to a low simmer for 10 minutes.

Skim off the soup scum/foam from the top of the soup regularly.

After 8-10 minutes, check that the potato is cooked tender.

Add extra salt as needed.

Add spring onion greens and coarse black pepper to taste.

Serve on its own or alongside steamed rice or French bread. Enjoy this 'feel good' Soup or share it with your loved ones.
Note
- If you have a homemade chicken stock, you can always replace the chicken stock or vegetable stock cube! When we are not feeling well, we tend to go for the easier option. I always have 'no MSG' stock cubes in my pantry.
- Coarse-grain pepper is recommended here, and freshly ground is the best!
- I have used Russet potatoes here along with Vidalia onions. You can use red onions, but Vidalia onions give the best aroma and flavor to this soup. If using red onions, you can use two, as Vidalia onions are usually a lot larger in size.
- When I make dishes using chicken, like fried rice or stir-fries, I often set aside some of the boneless chicken for this soup. You could even add just 1/4 cup.
- For the vegetarian option, you could just omit the chicken and chicken stock altogether. Or, replace it with beancurd(tau kwa) or silken tofu. If using silken tofu, add it during the final simmering process and not while sauteing. Some people may like to add some tomatoes as well. This soup is not one with a sour note. I personally just omit the chicken if I am going for the vegetarian version.
