Egg Bajji
Perfectly made Thattukada style Egg Bajji or Mutta Bajji. A favourite Kerala Tea time snack.

Ingredients
Eggs, boiled | 6 | |
Oil for deep frying | As needed | |
Chickpeas flour/besan / kadala podi | 1/2 cup | |
Plain flour/maida | 1/4 cup | |
Rice flour | 6 Tbsp | |
Kashmiri Chilli powder | 1 tsp | |
Salt | 1/2 tsp | |
Baking soda | 1/4 tsp | |
Asafoetida powder | 1/4 tsp | |
Cumin powder | 1/8 tsp | |
Water (as required) | Less than 1 cup |
Method:
Method for Egg Bajji:
- To a bowl, add all the ingredients except egg, oil and water. These are the ingredients for the batter.
- Pour water a little at a time. The batter should be quite thick and not runny. Mix well till there are no more lumps. However don’t make the batter too thick either, that it doesn’t fall off the spoon.
- Heat oil for deep frying, in a small wok. We can fry a couple of Bajjis at a time.
- As the oil heats up, slice all the eggs in half.
- Use a wooden spoon to place each slice of egg into the bowl of batter at a time (cut side up). Scoop up batter from the bowl and cover the top of the egg slice. Scoop the batter-coated egg slice. ensure that it is coated on all sides.
- Gently lower each coated egg-slice into the hot oil (cut side up). Fry for a minute or two, turning over the bajji half way through, till they are golden brown and the batter is cooked all over (no more wet traces) .
- Drain on kitchen paper. Serve with the Chilli Tomato Sauce.
For Instant Chilli Tomato Sauce:
Red onion | 1 small | |
Tomato | 1 large | |
Long red chilli (mild) | 1 | |
Garlic | 1 large clove | |
Kashmiri chilli powder | 1/2 tsp | |
Coriander leaves | 2 Tbsp | |
Vinegar | 1 Tbsp | |
Olive oil / Evoo | 1 Tbsp | |
Salt | To taste |
Method for Instant Chilli Tomato Sauce:
- Add the onion, tomato, garlic and fresh chilli to a small processor or grinder jar.
- Add 1/4 cup water and grind till an even consistency is achieved.
- Add chilli powder, coriander leaves, vinegar and grind once again.
- Lastly, add olive oil and salt and stir through.
