Easy Chopped Salad

Healthy , Quick Salad. No fuss and No dressing required.

Ingredients:

Pomegranate 1
Carrot 1 large
Sweet apple 1 large
Cucumbers 1-2 (depending on size)
Salad greens of choice (chopped roughly) 2 cups
Green chilli pepper 1 mild
Salt and Pepper (to taste) Optional
Almonds ( a handful ) Optional




Method:

  1. Cut the pomegranate in half and remove the seeds and any juice into a bowl
  2. Dice the carrot.
  3. Dice the apple in similar size.
  4. Dice Cucumber.
  5. Rinse the greens and use a salad spinner to remove water.
  6. Remove seeds of green chili and chop very finely.
  7. Add everything to the bowl. Add salt and pepper only if you like.
  8. Add optional almonds.
  9. Now toss everything well, making sure all the juice of pomegranate mixes through evenly.
  10. Voila… A great fresh Salad. I love it with Baked Salmon.
