Easy Chopped Salad
Description
We all know there are countless salads perfect for weeknights. But even with so many options, deciding what to make tonight can leave us stumped. That's why I keep a simple list of recipes—it's much easier to scroll through than to rack my brain for ideas after a long day!
Here's one that is a regular at our place.
Ingredients:

Cut the pomegranate in half and remove the seeds and any juice into a bowl

Dice the carrot.

Dice the apple into similar-sized pieces.

Dice Cucumber.

Rinse the greens and use a salad spinner to remove water.

Remove the seeds of green chili and chop very finely.

Add everything to the bowl. Add salt and pepper only if you like.

Add optional almonds.

Now toss everything well, making sure all the juice of the pomegranate mixes through evenly.

Voila... A great fresh Salad. I love it with Baked Salmon.
Note
Key Ingredients: Pomegranate, Apple, Cucumber, Carrot, Salad Greens, Chilli (Optional - Nuts, Seasoning).
