Easy Chopped Salad
Healthy , Quick Salad. No fuss and No dressing required.

Ingredients:
Pomegranate | 1 | |
Carrot | 1 large | |
Sweet apple | 1 large | |
Cucumbers | 1-2 (depending on size) | |
Salad greens of choice (chopped roughly) | 2 cups | |
Green chilli pepper | 1 mild | |
Salt and Pepper (to taste) | Optional | |
Almonds ( a handful ) | Optional |
Method:
- Cut the pomegranate in half and remove the seeds and any juice into a bowl
- Dice the carrot.
- Dice the apple in similar size.
- Dice Cucumber.
- Rinse the greens and use a salad spinner to remove water.
- Remove seeds of green chili and chop very finely.
- Add everything to the bowl. Add salt and pepper only if you like.
- Add optional almonds.
- Now toss everything well, making sure all the juice of pomegranate mixes through evenly.
- Voila… A great fresh Salad. I love it with Baked Salmon.
