Double Decker Breakfast Sandwich

Ingredients:

Large slices of soft, white sandwich bread 12 (for 4 people)
Chicken sausages 4
Eggs 4
Red onions, finely chopped 2   (One medium-sized and One small)
Tomato, finely chopped 1
Mild or hot green chillies, finely chopped 2 Tbsp
Butter ( for cooking the sausage, and toasting bread) As needed (1 Tbsp per sandwich, and for sausages)
Mayonnaise To liking (about 1 Tbsp per sandwich)
Coarse grain black pepper As needed
Salt To taste

Method:

  1. Crack the eggs into a bowl
  2. Finely chop the small-sized onion and green chili pepper and add to the eggs. Beat well, adding a little salt to taste.
  3. Finely chop the medium-sized onion and tomato and set aside for sandwich filling.
  4. Chop up the sausages and set them aside too.
  5. Melt some butter in a pan fry the chopped sausage, till light golden and cooked. Set aside.
  6. Add a Tbsp of butter to a flat wide non-stick pan/griddle pan and melt. Work with three slices of bread at a time. Place the slices of bread on the griddle pan and toast only one side till deep golden. Repeat for all sandwiches.
  7. In a smaller pan, make four small individual omelets for the sandwiches. (Use a mini pan if you have it, or the same pan used for frying sausages). I use a small square grill pan, the same size as a bread slice so that I get nice square omelets, perfect for filling a sandwich. One side of the omelet may be a little browner than the second.
  8. Assemble each sandwich as follows: OR JUST WATCH THE VIDEO 🙂 Lay the three toasted bread slices on board (toasted side down). Bread 1, Bread 2, Bread 3.
  9. Bread 1: Add a little chopped onion and tomato filling. Top with chopped, fried sausage. Sprinkle a good amount of coarse grain black pepper.
  10. Bread 2:  Spread a very small amount of Mayonnaise on both the toasted as well as untoasted sides. Place on top of the assembled Bread 1.
  11. Place the Omelette on top of Bread 2. Spread Mayonnaise on the untoasted side of Bread 3 and place this side on the omelet. Your Double Decker, Breakfast Sandwich is complete.  Repeat quickly will all the sandwiches. Serve them hot.

Notes:

  • Instead of sausages, you can use leftover grilled chicken.
  • The coarse grain black pepper should not be left out. It really makes a difference.
  • If you are like my cousins and like ketchup with everything, add a little ketchup along with the mayo. Not for me:)
  • If making the omelet in a larger pan, fold over the sides, as it begins to set to help fit the sandwich neater.
