Dhaba Style Chicken Karahi
Super Quick Dhaba Style Chicken. The punjabi style fast food – Dhaba Style Chicken Karahi is a hot smoky- wok – tossed chicken that we all love.
Ingredients:
chicken ( skinless, medium-sized, bone-in pieces) | 1 kg | |
red onion, chopped (1 large onion) | 1 ½ cups | |
tomato chopped ( 2 medium tomatoes) | 1 ½ cups | |
cumin seeds | 1 tsp | |
bay leaves | 2 | |
ginger-garlic paste | 1 large Tbsp | |
Kashmiri chilli powder | 2 tsp | |
coriander powder | 2 tsp | |
Punjabi style garam masala ( recommended) - or use your favourite | 1 tsp | |
turmeric powder | 1 tsp | |
black pepper powder | 1/4 tsp | |
Sliced green chillies, ginger juliennes and fresh chopped coriander leaves. | As needed: | |
vegetable oil or ghee ( Dhaba dishes are not shy when it comes to the oil, reduce according to your preference). | ¼ cup - ½ cup | |
salt (about 1 tsp) | To taste, |
Method:
- Heat oil in a wok or kadai.
- Add cumin seeds and bay leaves. Allow the seeds to pop.
- Next, add the onion and saute briefly.
- To this, add the garam masala first and saute till nice and aromatic and the onions are slightly softened.
- Add the cleaned, thoroughly drained chicken pieces and toss to coat with the onion-spice mixture. Cook for about 4 minutes, till the chicken, is evenly coloured.
- Add the ginger-garlic paste and remaining spice powders. Also, add salt to taste. Stir through to coat the pieces and cook for 1 minute.
- Add tomatoes and stir through. Add some of the ginger juliennes, chopped coriander and green chilli. (Reserve the remainder for garnish).
- Stir through. Cook, covered on medium heat for 10 minutes.
- Open, and turn up the heat to reduce the gravy to desired thickness.
- Garnish with remaining ginger juliennes, green chilli and coriander.
- Serve hot with roti/chapati, homemade butter and onion rings.
