Delicious Fried Chicken Recipe
Who does not love a good fried chicken???? Crispy-hot-crust and hot-juicy-inside! This is recipe ONE on my Blog!!
Ingredients:
Chicken cut in large pieces suitable to frying/broiling | 2 ½ lb / 1¼ kg | |
Buttermilk | ¾ cup | |
Garlic, minced | 2 cloves | |
Tabasco sauce | 1 tsp | |
All Purpose Flour | 1 cup | |
Mixed Dry Herbs (I use Tarragon, Parsley& Thyme, less thyme than the others) Experiment with your favorite herbs or use 1- 1 ¼ tsp of the following herb and spice combination : 1 tsp paprika ,1 tsp salt, 1 tsp mustard powder,½ tsp cinnamon powder, ¼ tsp cardamom powder, ¼ tsp onion powder, ¼ tsp celery salt | 1- 1¼ tsp | |
Oil (like peanut oil for deep frying) | As needed | |
Salt and Pepper | To Taste |
Method:
- Pat dry the chicken. Place in a dry shallow bowl.
- In another bowl, add salt, pepper, garlic, tabasco sauce and add enough buttermilk to cover the chicken. Taste the seasoning to adjust.
- Pour over the chicken in the first bowl.
- Marinate for a ½ hour.
- Combine flour, salt, pepper, herbs and toss well in another dry bowl.
- Heat Oil in a fryer or skillet.
- Dredge the marinated chicken in the flour mixture and roll around gently so that each piece is well coated. (Do not overcrowd)
- Lower into the oil. Once the Skillet is full, reduce the heat to medium and fry for 5-8 minutes,
- Gently turn the pieces over, careful not to break the buttermilk crust.
- Cover and fry on low for around 25 minutes. Then uncover and turn heat to high and turn over the chicken once more for 5 more minutes.
- Drain on kitchen paper for 5 minutes before serving.

Notes:
- Adjusting the heat goes a long way to frying perfect chicken if your cooking on the stove top.
- Remember if you are only frying a few pieces to adjust the time accordingly.
- Do not overcrowd the skillet or deep fryer.
- If you dont hear a nice moderate sizzle it means you must turn up the heat.
- To start off frying test the oil with a bit of batter it should sizzle quick but not splatter too much or the crust will be burnt on the outside before the chicken inside is cooked.
- Covering and frying for the majority of the time gives a succulently moist chicken and increasing the heat at the end gives a crisp coating.
- To get an even coating you can also put the flour mixture in a large food zipper bag, add all the chicken nd shake well after sealing the bag. Do not press on the pieces with hands
