Creamy Mushroom Curry

Description

Tender, juicy mushrooms bathed in a rich, golden tomato-cream reduction. Perfectly balanced with mild warming spices, this dish is a hearty vegetarian classic that melts in your mouth. Pairs beautifully with garlic naan.

  1.  Marinate the cleaned and chopped mushrooms with chili powder(1tsp), turmeric(¼tsp), and salt(¼tsp). Allow marinating just while you prepare the remaining ingredients.
  2. Blend ginger, garlic, and onion into a smooth paste with a couple of tablespoons of water.
  3. Heat oil in a non-stick wok or pan. Add the mushrooms and stir-fry for 2 minutes till they have lost the raw aroma and are cooked.
  4. Remove the mushrooms and all drippings from the pan and set them aside.
  5.  Wipe clean the same pan and heat some more oil.
  6. Add the blended paste and stir till nice and aromatic and no longer raw smelling.
  7. Add the yogurt, 1 Tbsp at a time, stirring continuously till dissolved, before adding the next spoonful.
  8. Next, add the tomato purée - stir.
  9. Add chili powder(2tsp) and garam masala(1/2tsp). Stir 30 seconds.
  10. Add the pan juices from the mushrooms. Cook till oil separates.
  11. Add 1 ¼ cups/300 ml water and stir till combined. Bring to a simmer and add the mushrooms. Also, add salt to taste (1/2 tsp).
  12. Simmer 5 minutes to thicken.
  13. Add 2 Tbsp cream and heat through.
  14. Take off the heat and sprinkle coriander leaves for garnish.
  15. Serve with Pulao, Nan, or Paratha.
