Creamy Mushroom Curry
A YUMMY, Creamy Mushroom Curry that can be made in no time!

Ingredients:
Mushrooms chopped into halves or quarters (I use Swiss brown ) | 450g (1lb) | |
Kashmiri chilly powder | 1 tsp each | |
Turmeric powder | ¼ tsp | |
Fresh ginger, chopped | 4cm (1½in) | |
Garlic, minced | 3 cloves | |
Red onion, chopped | 1 small | |
Sunflower/vegetable oil | 3-4 Tbsp | |
Yoghurt | 3 Tbsp | |
Tomato - blanched and puréed | 1 ripe | |
Kashmiri Chilli powder | 2 teaspoons | |
Garam Masala powder | 1/2 tsp | |
Salt | ¼ teaspoon | |
Cream | 2 Tbsp | |
Lime juice (optional) | To taste | |
Fresh coriander leaves, chopped | 2 tablespoons |
Method:
- Marinate the cleaned and chopped mushrooms with chili powder(1tsp), turmeric(¼tsp), and salt(¼tsp). Allow marinating just while you prepare the remaining ingredients.
- Blend ginger, garlic, and onion into a smooth paste with a couple of tablespoons of water.
- Heat oil in a non-stick wok or pan. Add the mushrooms and stir-fry for 2 minutes till they have lost the raw aroma and are cooked.
- Remove the mushrooms and all drippings from the pan and set them aside.
- Wipe clean the same pan and heat some more oil.
- Add the blended paste and stir till nice and aromatic and no longer raw smelling.
- Add the yogurt, 1 Tbsp at a time, stirring continuously till dissolved, before adding the next spoon.
- Next, add the tomato purée – stir.
- Add chili powder(2tsp) and garam masala(1/2tsp). Stir 30 seconds.
- Add the pan juices from the mushroom. Cook till oil separates.
- Add 1 ¼ cups/300 ml water and stir till combined. Bring to a simmer and add the mushrooms. Also, add salt to taste (1/2 tsp).
- Simmer 5 minutes to thicken.
- Add 2 Tbsp cream and heat through.
- Take off heat and sprinkle coriander leaves for garnish.
- Serve with Pulao, Nan or Paratha.
