Creamy Carrot Raita

A refreshingly different Raita recipe to switch up your dinner or lunch menu. Goes great with any type of rice dish. Creamy Carrot Raita is fresh tasting and healthy!

Ingredients:

Thick yogurt 1 1/2 cups
Carrot, freshly diced 1 1/4 cup  
Celery, finely chopped 1 1/2 Tbsp
Spring onion ( bulb and leaves), chopped 3 Tbsp
Green chilli, minced 1 Tbsp ( or to taste )
Garlic powder 1/4 tsp
Black pepper powder A Dash
Salt To taste

Method:

  1. Dice the fresh carrot and steam till lightly tender. Should not be too crunchy for this Raita. I like to steam in the microwave on high for 2 minutes. Cool completely.
  2. Add the thick yogurt to a bowl and whisk well.
  3. Add the chopped green chilli, celery, and spring onion.
  4. Add salt to taste and a dash of pepper.
  5. Add the cooled carrot and stir through.
  6. Lastly, add the garlic powder and adjust seasonings.
  7. Serve with any rice dish of your choice or the Tomato Garlic Rice on the Intro page.

Creamy Carrot Raita

Notes:

  • Steaming the carrot till slightly tender makes the Raita easier to eat, while not compromising on flavor. Steam the diced carrot instead of boiling in water for best results.
  • The yogurt needs to be very thick and creamy and sour as well. I like to mix Sour Indian yogurt with regular yogurt to get the best flavor.

Key Ingredients: Basmati Rice, Tomato, Garlic, Green Chilli, Oil, Stock/Water, Coriander, Garam Masala, Salt.
