Club Sandwich
Description
The Club sandwich is often cut into quarters or halves and secured with cocktail sticks for easy handling. It's a satisfying and flavorful option, perfect for a light lunch or a hearty snack.

Cut the lettuce, which has been rinsed and dried on paper or using a salad spinner into square pieces to fit our sandwich.

Slice the tomatoes, in even slices.

If you are using luncheon meat, lightly fry the slices in a lightly greased pan first. Chicken sandwich slices do not need cooking.

Make the first layer :You can use a grill pan or regular pan on the stove top, or use a sandwich press.

Lightly butter the grill pan or press. Place the bread, two slices at a time.

Place cheese slice on top, followed by tomato slices and lettuce.

Top with another slice of bread. Use the press to grill this sandwich or turn over half way to get both sides toasted/grilled and the cheese melted. Make 4 toasted sandwiches like this.

Make the second layer: Grill the remaining 8 slices of bread in a buttered grill pan or regular pan. I grill only one side. If you like sturdier sandwiches, you can grill both sides.

Lightly spread mayonnaise on first toast. Place the chicken slice or two slices of luncheon meat on top.

Add tomatoes slices, followed by lettuce layer.

Top with another grilled bread slice with mayonnaise and a little dijon mustard if you like.

Now place the first grilled layer over the second, and cut through the center into triangles. Some may like to apply another thin layer of mayo between the two grilled sandwich layers, but this is not required, and makes it easy to choose one of the layers of the sandwich separately if you prefer. That’s a Jumbo Club Sandwich.

For a regular 3 layer sandwich, make the grilled cheese layer and then another slice of toasted bread with mayo, tomato, and lettuce to sandwich it and make 3 layers. Cut into triangles and place a wooden ick through each slice.
Note
- A regular club sandwich has 3 slices of bread. A Jumbo club sandwich has four slices of bread, where you make two separate grilled sandwiches and sandwich them together. The original sandwich was mostly 5 slices of bread.
