Chicken Tikka
Description
These delicious skewered chicken kebabs are marinated in thickened yoghurt and tandoori style spices. The outcome is tender, succulent and SIMPLY irresistible.

Take half the amounts of ginger paste, garlic paste, and chili powder.

Add this to the chicken along with salt to taste. Rub well and allow to marinate for 20 minutes.

Heat the butter. Add the carom seeds and after 5 seconds, add the chick pea flour.

Stir and cook till a smooth paste is formed and a nice nutty aroma develops.

Stir this cooked paste into the thickened yogurt.

Now add the remaining ginger paste, garlic paste, chili powder along with garam masala, cumin, lime juice and more salt to taste.

Heat the mustard oil. Add the turmeric and quickly remove from heat. Add this oil to the yogurt mixture too.

Stir well till a homogenous mixture is formed.

Add to the chicken that has been resting in the initial marinade for 20 minutes. Rub into the pieces well.

Refrigerate for another 2-3 hours.

You can choose to skewer these tikkas and cook on the grill.

Alternatively: bake on high temp, basting lightly with melted butter every ten minutes for about 30 minutes or until the edges are charred. Also, baste once at the very end of cooking time.
Note
- Thickened or ‘hung yogurt’ is yogurt that has the whey removed from it.
- You can make thickened yogurt, by hanging the yogurt in a fine muslin/cheesecloth (UNDISTURBED) for ½ to 1 hour. You can also use a bouillon strainer if you have one (those with extremely fine mesh).
