Chicken Doner Wrap
Quick to make and Yummy to eat, these Chicken Doner Wraps go down well with everyone.

Ingredients:
Boneless chicken breast | 600 gms | |
Olive oil | 3-4 Tbsp | |
Red onion, finely diced | Half | |
French Fries | 1 plate | |
Tomato wedges (about 2 large tomatoes) | As needed | |
Shredded Lettuce (1 cup) | as needed | |
Shredded Cabbage (1 cup) | As needed | |
Sliced onion ( 1 onion approx - optional) Â | As needed | |
Pita Bread/ Plain Wraps | 8 |
To Marinate the Chicken:
Yoghurt | 2 Tbsp | |
Fresh Lime/lemon juice | 1 Tbsp | |
Paprika / Mild chilli powder | 3/4 tsp | |
Black pepper powder | 3/4 tsp | |
Cumin powder | 1/2 tsp | |
Tabasco sauce / Hot sauce | 1/2 tsp | |
Mild Mustard | 1/2 tsp | |
Garlic, pounded to a paste | 6 large cloves | |
Celery leaves, finely chopped | 3 Tbsp | |
Salt (3/4 tsp) | To taste |
For the Sauce:
Mayonnaise | 4 Tbsp | |
Yoghurt | 4 Tbsp | |
Olive oil | 1 Tbsp | |
Sriracha sauce ( or other hot-smoky chilli sauce) | 1/2 tsp |
Method:
- Cut the chicken breast into small pieces. Add to a bowl.
- Add all ingredients to ‘marinate the chicken’. Rub well into the chicken pieces. Set aside to marinate for 20-30 minutes.
- Shred, Slice Tomato, Cabbage, Lettuce, Option Onion for filling the wraps.
- When it is time to cook the chicken, add the olive oil (3-4Tbsp) and the chopped Onion(half onion diced). Mix through the chicken with your hands.
- Place a non-stick pan/wok with high edges on heat. Heat the pan till it is smoking.
- Add all the chicken to the preheated – dry pan. This cause some smoking.
- Stir-fry the chicken on High heat, stirring continuously till some colour is developed and some char marks. 8 – 10 minutes. Set aside.
- Prepare the French fries. Add some salt.
- Prepare the Simple sauce by mixing the mayonnaise, yoghurt, a little olive oil to loosen the texture and stir in the sriracha sauce.
- Warm up the wraps in the oven, before you start to fill them. Make sure they stay soft.
- Assemble the wraps:
- Working with one pita/ wrap at a time. First, spoon a thin spreading of sauce vertically through the centre.
- Add a layer of chicken over the line of sauce. Add a few fries over that.
- Add a  little sauce again, followed by thin layers of lettuce, cabbage, tomato, onion if using.
- Now wrap the pita with the help of a sheet of aluminium foil.
- Heat a griddle pan. Place the foil-wrapped rolls on the grill pan, making sure the chicken side lays on the pan. We want to heat the chicken through the wrap without overheating the fresh vegetables. Heat for less than a minute and serve quickly, with extra fries(optional) and salad!
