Cereal Egg Tofu Stir Fry
This is one super quick and super satisfying Asian Stir-Fry.
Savoury, water-soft Egg Tofu is coated and fried and then tossed in a buttery, savoury sauce with crisp Original Nestum® Cereal. You must try it!

Ingredients:
Egg tofu | 2 tubes | |
Cornflour / cornstarch | 1/4 cup | |
Garlic powder | 1/4 tsp | |
Vegetable Oil/ Sunflower Oil for shallow frying | As needed | |
Butter | 2 Tbsp | |
Mild long red chilli, sliced | 1 | |
Hot chilli padi (small hot red chilli), sliced | 1 | |
Fresh Curry Leaves | 3 Tbsp | |
Original Nestum® Cereal (see notes) | 2 Tbsp | |
Salt(to taste) | As needed |
Method:
- Remove the egg tofu, gently from the packaging.
- Slice into 1/2-1 inch rounds as desired.
- Leave the slices on some absorbent kitchen paper to absorb excess water for about 5 minutes.
- Add the cornflour to a shallow plate. Add the garlic powder and mix the mixture well. Spread it out over the plate.
- Gently coat all the sliced pieces of egg tofu to cover them with this garlic powder-cornflour mixture. Use your hands, as the egg tofu pieces are really delicate. Using spatula or tongs can break them.
- Add the oil for shallow frying to a frying pan. Once the oil is hot, add the coated Egg tofu slices. Don’t crowd the pan too much, as you need to flip them over later.
- Let this fry on one side, for just under 1 minute on a medium flame.
- Once golden, GENTLY flip them over with a mini spatula.
- Once both sides are golden, remove from the oil and rain on Kitchen Paper towels. Continue with the next batch.
- Once all the slices are golden and removed, remove the oil from the skillet and add the butter.
- Once the butter has melted add the sliced red chillies, fresh curry leaves.
- Stir and allow to become fragrant but make sure the butter does not go brown.
- Now add the Original Nestum® Cereal (see notes).
- Season with a good pinch of salt. Give this a stir till it becomes slightly golden and nice and foamy.
- Once you see the contents along the edge of the pan, going slightly crisp/brown, Return the fried egg tofu.
- Gently scrape the ingredients, from the bottom of the pan, without breaking up the tofu. And then Toss till the Egg tofu slices are coated thoroughly with all the ingredients. They absorb the sauce and get coated with the crisp cereal. Serve with steamed white rice!

Notes:
- If you can not find Nestum Cereal, substitute with an equal amount of rolled oats and cornflakes that have been ground to course texture, but it isn’t quite the same as the original recipe.
