Biryani Chutney (Mint or Coriander Chutney)

Biryani Chutney or Biryani Chammanthi, as we call it in Kerala, is made with Fresh Coriander or Mint leaves and Coconut. It goes well with any Biryani or Ghee rice. Often when we have guests, we will make three different Salad sides for biryani, and this is one of them. The key to making good chammanthi / chutney is a no-brainer really – Use THE FRESHEST Ingredients! You can make this in a couple of different ways, according to the mood.

You can make either Coriander Chutney OR Mint Chutney. Also, if you are making Coriander Chutney, you can add in 2 Tbsp of Mint leaves and vise-versa. So there are 4 ways you can switch this recipe up!

Ingredients:

Fresh Coriander or Fresh Mint 3/4 cup
Grated Coconut 3/4 cup
Small green chillies 1-2
Shallot 1
Yoghurt (thick set) 2 tsp
Fresh Lime juice(1 tsp) As needed
Salt To taste

Use Fresh Herbs!




Method:

  1. Rinse the herbs thoroughly and drain well to remove all water. Leave on kitchen paper for a while.
  2. Add the fresh Coriander (or Mint) to the small jar of your blender.
  3. Add grated coconut (roughly the same amount as the herb used), shallot and green chilli.
  4. Pulse a few times to get a coarsely ground mixture, with all the herbs blended through evenly. It should not be too smooth.
  5. Add yoghurt, lime juice and salt to taste. Stir through.
  6. Cover tightly and refrigerate till serving time. Remove from fridge 10-20 minutes before serving.

Notes:

  • Check out the Intro page, for other Salad/Sides to accompany Biryani.
  • I usually prefer Mint Chutney, with 2 spoons of coriander leaves added. It’s my family favourite. However, all combinations are very nice!
  • You can optionally add 1/8 tsp cumin seeds while grinding everything together for a different flavour. You can also add a little black salt, if desired.
  • Use mild or hot green chillies, according to preference. They should be fresh and have a fresh scent of chillies.

Key Ingredients: Coriander / Mint leaves,  Coconut, Shallot, Green Chilli, Yoghurt, Lime, Salt.
