Baked Spinach

Description

A simple baked dish that includes spinach, egg, and cheese, similar to a quiche, frittata. This is a family favourite.

  1. Preheat oven to 177ºc/ 350 ºF.
  2. Steam the spinach over boiling water for 5 minutes  (or in a microwave steamer for 2 minutes). Do not boil it in water.
  3. Meanwhile, chop the shallots and green chilli. (I add both to the mini processor)
  4. Once steamed, take roughly half the amount of steamed spinach and blend it into a smooth puree. (I do this in the same mini processor)
  5.  Add eggs to a bowl and beat well. Next, add both flours and beat again till there are no more lumps. (I use the immersion blender attachment here- its easier than using a beater)
  6. Add the pureed spinach along with salt and pepper (or seasoning powder preferred).
  7. Also add the chopped ingredients (chopped steamed spinach, shallots, green chili), grated coconut & cheese.
  8. Mix everything well with a spoon. Taste and adjust seasoning.
  9. Pour into a lightly greased baking dish.
  10. Scatter the nuts over the mixture.
  11. Bake for 30 - 40 minutes ( this varies from oven to oven - bake till the top is set without any darkening on top or sides).

Note

  • For seasoning powder, you can add chicken stock powder or any salted seasoning mix you like. I like to add the following mix:  1/8 tsp white pepper powder, 1/8 tsp garlic powder, tiny pinch ginger powder, 1/8 tsp onion powder, 1/3 tsp powdered sugar, 1/2 tsp salt.
  • Allow the baked spinach to rest a while before serving. This allows the flavors to blend well.
  • If reheating the next day I like to sprinkle a little salt , pepper or my favorite soup seasoning. Yum!
