Baked Beans and Eggs (5 ingredient Brunch)
Description
A signature brunch that’s as effortless as it is satisfying, this five-ingredient dish hits all the right notes—creamy, subtly sweet, and just a little bit smoky. By simmering classic baked beans with sautéed onions, garlic, and a touch of mild chili, you create a rich, bubbly base for perfectly poached eggs. It’s a hearty, quick-fix comfort meal that’s best enjoyed straight from the pan with a side of crusty garlic bread.

Place a good skillet or nonstick pan on the heat. As it heats up pour in the oil.

As the oil heats up, add the onion and garlic and saute on low-medium heat, stirring occasionally, slowly till you see golden brown spots here and there.

Add the canned baked beans in tomato sauce and stir well. Bring to a simmer.

Stir in the chili powder and simmer briefly, till fragrant.

Make small indentations in the sauce with a rounded ladle and crack an egg into each one.

On low heat, cover and cook till the eggs are just setting. Don't overcook.

Garnish with chopped parsley and serve with some crusty bread or garlic bread.
Note
- This dish really doesn't need salt, but you can add a pinch if you like.
- The chilli powder I use is a very mild one with a great aroma. Those who like paprika can use that for an even milder dish. Smoked paprika may also be used if you love that flavor. Those who like it hot may also add a dash of hot sauce.
- I usually use Singapore Ayam brand or Malaysia Makmur Brand Baked beans in tomato sauce(425 gms). Heinz is more commonly available.
- Those who like added layers of texture and flavor may add sliced mushrooms or bell peppers. You can also add cheese over the top while the eggs are setting.
- Key Ingredients: Canned Baked beans in Tomato sauce, Eggs, Onion, Garlic, Chili powder/Paprika, Oil, Parlsey.
