‘ Baharat’ means ‘spices’ in the Arabic language. It is an essential spice mix/seasoning in Middle Eastern (Arabian-Gulf) and eastern Mediterranean regions.  It’s also known as Lebanese 7 spice.

Baharat is something you will love to always have in your pantry. It adds smoky, aromatic, deep flavor to meat, poultry, and fish, as well as more depth to all your favorite dishes.

CUMIN seeds are often added to this spice mix, but I find it is better to add ground cumin to taste, at the time of cooking, instead of adding it to the spice. Some dishes are best without the addition of cumin, which is why my recipe does not include cumin.

The versatility of the blend is reflected in its regional adaptations:

Lebanese/Syrian Baharat (often called “Seven Spice”): Typically focuses on the core blend, with allspice sometimes replacing or augmenting other spices

North African/Tunisian Baharat: May include fragrant additions like dried rosebuds or ginger for a floral note.

Turkish Baharat: Often features dried mint and sometimes sumac or oregano.

Gulf Countries (e.g., Saudi Arabia, Kuwait): Sometimes incorporate more unique ingredients like saffron or dried black lime (loomi).

Description

Baharat is known for its warm, earthy, and aromatic character. It is a carefully balanced blend that leans savory, often with a subtle, gentle sweetness and a smoky depth, though it is typically not overtly spicy. This is my favourite combination of spices, making 1/2 a cup of spice-mix.

  1. Add all the whole spices to a heavy-based wok or pan (ie. all spices except paprika).
  2. Stir on medium heat for precisely 5 minutes.
  3. Add to a spice grinder along with paprika.
  4. Grind to a powder.
  5. Store in Airtight Jars.
