10 Minute Capsicum Chicken

  1. Wash the chicken. Pat dry with kitchen paper towels. Cut the chicken into bite-size pieces.
  2. Crush the garlic and green chilies together to a fine paste.
  3. Add to the rest of the ‘marinade ingredients’ and mix well.
  4. Marinate chicken pieces, with this mixture and allow to sit for 10 -15 minutes.
  5. Meanwhile; Cut the capsicum into square or rectangle pieces.
  6. Cut the onion into squares as well.
  7. Heat 3 Tbsp oil in a nonstick wok/pan. On high heat, stir-fry the chicken.
  8. Toss continuously till the chicken cooks tender white and still remains moist. This does not take too long. Cut through your biggest chunk of chicken to test doneness. Set aside. (Or you can just move to the side of the pan – however, setting aside gives a better result).
    We toss the marinated chicken here, continuously on high heat to cook it fast. This process is called velveting and keeps the chicken moist. It is important here not to overcook the chicken. Overcooked chicken is the surest way to creat a bland stir fry.
  9. In same wok heat, another 1 tsp oil add the onion and stir-fry till onion starts to turn golden.
  10. Then add the capsicum and stir-fry till slightly golden on the edges as well.
  11. Return the chicken to the wok and toss well together for a minute.

    next add the sauce ingredients, except the cornflour and toss together. 

  12. Add the cornflour solution and cook till this mixture thickens and coats the chicken ( about 20 seconds).
  13. At this point, you can add more pepper or green chilli sauce to your liking. Some people like it very mild( borderline bland) and some like to add sauce, pepper and more cornflour slurry to make it saucier and spicier.
  14. Garnish with Spring onion or Coriander/Cilantro leaves.
  15. Serve hot.

Note

  • This is a recipe you can add to. Since the flavors are so mild, many people may find it bland, so add dark soy sauce, green chilli sauce, more green chillies, more corn flour slurry to get the sauce as moist and flavourful as you like. The chicken cooked this way stays succulent, and you can add ingredients to make it more robust to suit your taste.
  • You can add a tsp of Oyster Sauce when you stir-fry the chicken with vegetables for additional flavor.
  • You can add 1 tsp of Shao Xing Chinese cooking wine or meat tenderizer to the marinade to tenderize the chicken.
  • This is a very mild tasting yet succulent preparation of chicken if made correctly. Those who like can add more pepper and green chillies or chopped cilantro. The tender chicken is meant to shine through here.
