Quick Stir Fried Rice Vermicelli with Vegetables (BeeHoon)
Beehoon or Rice Vermicelli, is a great thing to make a quick lunch. Chop some veggies and soak the vermicelli. Pack the lunch in a matter of minutes easily. My kids will actually eat their veggies when it’s mixed in with the Beehoon. This Stir Fried Rice Vermicelli with Vegetables is a quick and healthy fix for your kids lunch box.
Adults can add more vegetables to suit their taste. Left over chicken or other protein from the previous night may be added as well. I often like to add some bean thread (glass noodles) along with the rice vermicelli. It tastes even better!

Quick Stir Fried Rice Vermicelli with Vegetables (BeeHoon)
Ingredients:
- 400 – 450 gms rice vermicelli (beehoon) (or use a combination of rice vermicelli and glass noodles)
- ½ cup broccoli, sliced into small pieces
- 1 small carrot, cut into small dice
- 1 clove garlic, bruised
- salt  to taste
- 2 Tbsp oil
- 1 ½ – 2 Tbsp light soy sauce
- 1 omelette – optional.
Method:
- Boil water in kettle. Pour over the dried rice vermicelli and allow to soften while you chop/ slices the veggies.
- Drain the vermicelli.
- Heat oil in large wok. Heat till smoking.
- Add the garlic and allow to go golden. (5 seconds).
- Add the diced carrot and stir fry for 30 seconds.
- Add the broccoli and toss for 10 seconds, till just tender.
- Now add the the drained vermicelli (beehoon).
- Toss to mix in the vegetables evenly.
- Add the soy sauce and mix through to season.
- Serve with  fried egg / omelette if desired.
