QUICK Saucy Ginger Chicken Stir Fry over Rice

Another crazy day and very little time to make dinner. Oh, what the scramble! I am in the mood for making something kinda fancy nevertheless. Chicken, Ginger (Lots of it), Rice, an Egg….. and Voila!! Pretty awesome, quick recipe and I served it just the way they do at my favorite eatery. Serve it piping hot! Aaah… and to think it only took 10 minutes!!

How to make Saucy Ginger Chicken and Rice Pepper Lunch- Recipe at a glance:

  • Start cooking rice.  (how to cook rice in the microwave)
  • Fry garlic and chilli.
  • Fry ginger and add chicken.
  • Stir fry chicken with freshly chopped ingredients.
  • Add sauces. Cook and thicken.
  • Fry eggs
  • Pour Saucy chicken over plated rice and add egg and pepper on top!

You might also like:

Ingredients:

  • 1 chicken breast, cut into bite-size pieces – rinsed and drained
  • 1 cup Thai rice – precooked
  • 1 long dried chili, cut into pieces
  • 2 cloves garlic, bruised
  • 2 LARGE knobs of ginger, peeled and sliced into large, thin, thumb-length diagonal slices – do not chop or mince finely
  • 1 onion – white or Vidalia, chopped into squares
  • 5 Tbsp spring onion, chopped 1-2 ” pieces
  • 1 Tbsp Oyster Sauce
  • 1 Tbsp Light Soy Sauce
  • 1-2 tsp Dark Soy Sauce
  • 1-2 tsp Thick Dark Sweet Soy Sauce(Kick Manis)
  • ½ – ¾ tsp  white pepper powder or black pepper powder
  • 2 tsp cornflour mixed in ¾ cup water to make a slurry
  • 1 Tbsp finely minced coriander/cilantro
  • 3 Tbsp + 1 Tbsp Sunflower Oil
  • 2 eggs
