Quick Carrot Halwa – Gajar Ka Halwa
One of the most popular desserts in India, this Quick Carrot Halwa or ‘ Gajar Ka Halwa ‘, is extremely easy to make. It is made with a fair amount of sugar, ghee and milk solids so keep your portions small. Garnished with nuts and silver foil, this recipe originated from Punjab. Here is a recipe that uses Milk powder and ‘Khoya’ to give you fast Carrot Halwa when the craving hits!

Quick Carrot Halwa – Gajar Ka Halwa
Ingredients:
- 500 gms carrot, peeled and grated – about 4 cups grated (Use Indian Red Carrots if possible to get more depth in color)
- ¹⁄3 cup ghee (clarified butter)
- 3 cardamom pods, crushed slightly
- ½ cup sugar ( give or take depending on sweetness of carrots and personal preference)
- ½ cup milk powder (use white milk powder and not those with a yellow tinge)
- ¹⁄3 cup khoya/mawa
- optional -½ Tbsp Rose water
- Nuts or choice- whole or whopped and silver paper to garnish
Method:
- Peel and grate the carrots.
- Heat the ghee in a non stick pan. Add cardamom and allow to crackle.
- Add the grated carrot and cook. Allow the moisture to be releases and then dry up slightly.
- Add the sugar and stir till the sugar is dissolved.
- Cook till the ghee separates and appears on top.
- Next, add the milk powder. Stir till it is well incorporated.
- Stir well on medium heat for about 3-5 minutes.
- When the moisture is gone and the Halwa is quite thick, add the grated khoya/mawa.
- Stir briefly. Add the rose water over the top and cover the pan.
- Remove from heat and allow to rest 5 minutes.
- Garnish with edible silver paper and nuts of choice.
- To serve: You can spoon it into a plate and serve or you can pat it down into a small square or rectangle casserole dish and chill. Once chilled you can cut into squares and serve.
Quick Carrot Halwa – Gajar Ka Halwa
- For the garnish, you can use chopped nuts or a few whole nuts. You can fry the nuts in ghee first or keep them raw. You can also stir them into the hot Halwa if desired.
- Raisins may also be used, stir into the hot halwa.

In the recipe for Quick Carrot Halwa the time specified for preparation, cook time and total time do not agree.
I personally prefer the gajar ka halwa to have its authentic taste without adding any spices or condiments. This however depends on individual taste.
The timing has been edited. Cardamom and Rose water is optional. I make without the rosewater but i do like some cardamom in there 🙂
