Potato and Egg Bajji – A very quick and easy snack. I love to make Bajji’s ( Pakora’s) when everyone is around at tea time. If you have some potato, egg and chickpea flour (besan) at home, you can make these in 20 minutes. I also came up with this instant sauce, after tasting something similar with Potato Bondas at a roadside stall once. It is so simple to make and adds a punch to your snack time!

Recipe at a glance:
- Slice potatoes. Microwave lightly
- Boil Eggs. Slice.
- Prepare batter.
- Make fritters of a slice of egg, sandwiched between 2 slices of parcooked potato.
- Sprinkle the fritters with herbs and spice.
- Dip in the batter, as oil is heating up.
- Fry till puffed and golden.
Key Ingredients: Potato, Boiled Egg, Chickpea flour, Seasoning, Oil.
