Poricha Kozhi Biryani Recipe for Malabar Biryani Lovers.

There are several types of Malabar Biryani. The Malabar districts are considered a Paradise of Hospitality and Delicious delicacies. Palakkad, Malappuram, Kozhikode, Kannur, Kasaragod and Wayanad all have unique dishes and biryanis with unique techniques. The Thalassery Biryani enjoys a huge fan following all across Kerala, and has a special place in the hearts of Malayalees across the world. You can get my recipe here.

Kozhikode Biryani, Malappuram Biryani.. these all have their loyal devotees as well! I have several Biryani recipes, and different readers often let me know which is their favourite.

One variation of all styles of biryani is the addition of fried chicken to the Masala. Fried Chicken Biryani or Poricha Kozhi Biryani, is indeed a weakness for many! Adding marinated fried chicken somehow takes a delicious dish to another level!

So this is my RAS Original version of Malabar style Fried Chicken Biryani – or ‘Poricha Kozhi Biryani‘. Video is available.

How to make Poricha Kozhi Biryani – Malabar style Fried Chicken Biryani- Recipe at a glance:

  • Marinate chicken 1- 5 hours or overnight.
  • Partially fry the chicken in batches.
  • Prepare the special Masala for Fried chicken Biryani.
  • Add the fried chicken and marinating juices and cook till just tender.
  • Cook rice separately with select spices.
  • Layer the rice and chicken masala together.
  • Dum cook (Steam cook) in the oven or on the stovetop as desired.

Kitchen Items (Cookware, Utensils, Gadgets) used:

  • One larger biryani pot, for cooking the chicken masala, layering the cooked rice and proceeding with the ‘dum’
  • One pot, for cooking the rice in.
  • One deep non-stick frying pan, to fry the chicken pieces.
  • Mixer-grinder, mandoline slicer(optional), tongs, strainers, and Large wooden spatulas.

Ingredients: (1 cup=240 ml measure)

  • 1 1/4 – 1/2 kg chicken pieces, skinless, bone-in pieces cut into medium-sized pieces
  • 5 cups Kaima/ Jeerakasala rice
  • 6  boiled eggs
  • 6 medium-sized Red Onions
  • 1/2 cup Garlic (small Indian Garlic cloves)
  • a little less Ginger than Garlic
  • 10-15 small hot green chillies
  • 3 medium-sized Ripe fresh tomatoes
  • 4 Tbsp plus 2 tsp Ghee
  • a little over 1/4 tsp Turmeric powder
  • 1/2 -3/4 tsp Black pepper powder
  • 4 Tbsp Regular set yoghurt (not too sour)
  • 1/2 cup fresh Mint leaves
  • 1/2 cup Coriander leaves plus extra for layering/garnish
  • 1 sprig of fresh Curry leaves
  • 3/4 -1 cup Coconut Oil for shallow frying Chicken
  • 1/2 tsp Salt
  • 2-3 tsp Rosewater(optional)

Quick Spice Mix: use fresh and fragrant spices

  • 8 Cloves
  • 10 Green Cardamom pods
  • 2 tsp Fennel seeds
  • 2 very small sticks of Cinnamon
  • 6 segments of Star Anise
  • 3/4 tsp Black peppercorns

To Marinate Chicken

  • 18 small Garlic cloves(Indian Garlic, cloves are much smaller in size better in flavor for Malabar Biryanis)
  • About the same of Fresh peeled Ginger as Garlic, cut into small pieces
  • 2 1/2 Tbsp thick set Yoghurt
  • 3 tsp of the prepared ‘ Quick Spice Mix
  • 1 1/2 tsp Kashmiri Chilli powder
  • 1  tsp Hot Chilli powder/ Cayenne
  • just under 1/2 tsp Pepper
  • 1/4 tsp Turmeric powder
  • 2 Tbsp Coconut oil
  • 1  1/4 tsp Salt

For Cooking the Rice:

  • 5 Tbsp Ghee
  • 9 1/4  cups of boiled (hot) water
  • 8 Cloves
  • 8 Green Cardamom
  • 6 small broken pieces of Cinnamon
  • 6 segments of Star Anise
  • 1/2 tsp Fennel seeds
  • 1/2 tsp Black Peppercorns
  • 4 1/2 tsp Salt
  • 2 tsp Lime juice
  • 2 Large Red Onions, for frying
  • 1/2 cup cashew nuts
  • 1/4 cup Kismis/Golden Sultanas
