Peechinga Mutta Thoran – Variety in every meal.

Every meal needs a vegetable side dish. Making veggie stir-fries / sabji every day can be a daunting task because you need variety. Try this very simple stir-fry from Kerala, made with diced Luffa (Ridge gourd), scrambled egg and coconut. Quick, Simple and Tasty!

It is essential to choose tender Ridge gourd – tender but firm, dark green in colour and without blemishes.  Although the skin is usually only scraped and the ‘ridges’ peeled ( to retain fibre) – which is absolutely fine, I tend to peel the skin a bit more for this recipe.

Ridge Gourd is high in nutrients and Vitamin C. It is low in calories, high in water content. and provides good dietary fibre, thus making it a good addition to weight loss diets. Being a good source of anti-oxidants, it is also good for skin, reducing skin infections and acts as a blood purifier. Ridge Gourd also helps maintain blood sugar levels and has anti-cancer, anti-aging properties.
