Pavakka Pachadi – Bittergourd Curry withYoghurt

This is a delicious, yoghurt based  curried dish that goes well with hot rice! The addition of the crisped, fried golden bitter gourd to the beaten yoghurt before serving is an irresistible side dish to any meal.Â
Pavakka Pachadi – Bittergourd Curry with Yoghurt

Ingredients:
- Â 2 Bitter Melons /Gourd ,sliced into thin, large pieces / semi circles.
- 2 cups yoghurt
- 2 green chillies
- 1 tsp turmeric powder
- ½ tsp mustard seeds
- curry leaves, as required
- salt to taste
- 1- 2 Â Tbsp Cooking oil
Method:
- Add the turmeric powder, salt, curry leaves and green chillies to the bitter gourd and rub the ingredients into the gourd well. Leave to marinate for 1 hour.
- Heat the oil in a frying pan and fry the marinated gourd till crispy.
- Lightly whisk the yoghurt.
- Add the fried gourd to the yoghurt.
- Ready to serve. Best with Kerala Rice.

Recipe is complete.. the fried bittergourd is simply added to whipped yogurt mixture in this recipe. 🙂
