Pavakka / Kaipakka Pachadi with Coconut

Ingredients:
- 2 cups bitter gourd slices, thin semi circle or circle slices
- ¾ cup yoghurt
- ¾ cup grated coconut
- 1 shallot
- ½ tsp mustard seeds
- 2 dry red chillies
- curry leaves – as required
- salt to taste
- ¼ cup Refined oil
Method:
- Sprinkle the slices of bittergourd with salt and turmeric if desired and set aside for a while.
- Fry the slices till golden brown. Drain.
- Blend together the coconut, yoghurt and shallot to a fine paste.
- Add the ground paste and just enough boiled and cooled water for desired consistency.
- Add the fried gourd slices.
- Heat 2 tsp oil in a pan, splutter the mustard seeds, dry chili and curry leaves and add on top of the curry.
- Serve.
