Pad See Ew (Thai Stir Fried Noodles)
Pad Thai may enjoy the limelight as far as Thai Noodles, are concerned but Thai food lovers will agree, that Pad See Ew is one of the most comforting, blissful noodle dishes of all. Extremely popular street food, this dish is easy to make at home.
Pad means ‘Stir-Fry’ and See Ew means ‘Soy Sauce’ (sii-íu / ซีอิ๊ว). Not quite a good description, but it refers to Stir-Fried Thai Rice Noodles, in Soy Sauce (or a combination of sauces, rather). The correct full name would be Guay Tiew Pad See Ew where Guay Tiew(Kway Teow) means ‘Noodles’. Pad See Ew is authentically known by its Chinese name Phat Si-Io from which the Thai dish originated.
The noodles used are wide rice noodles (Hor Fun Noodles). These are available fresh at Asian wet markets or prepackaged in the cold section of your supermarket, that sells Asian ingredients.
Pad See Ew is the Thai version of Malaysian or Indonesian Kway Teow, except that usually the wider ‘hor fun’ noodles are used. You can find similar recipes, using these types of rice noodles below.

The noodles used are Wide Hor Fun Rice Noodles:
In my recipe, we use chicken & tofu. You can ea easily make Just-Chicken or Just-Tofu for the vegetarian option, by doubling the amounts of chicken/tofu and the marination ingredients. I like to make half and half since we make 4 individual servings and can have half veg and half non-veg. But you can also add both chicken and tofu and mix if you like the mixed textures and flavors.
Please have a look at the ‘Notes’ below the recipe, before you begin.
Ingredients:
- 1 kg wide Hor Fun Noodles (fresh) – 4 servings.
- 400 gms Gai Lan – stems sliced on a bias(diagonally), leaves chopped coarsely
- 8 cloves garlic, minced
- 4 Eggs
- 7-8 Tbsp Vegetable oil (or other neutral flavored oil)
- 3 tsp raw sugar
- white pepper powder – to season
For Chicken:
- 300-350 gms Boneless chicken(thigh or breast), cut into strips
- 2 Tbsp Light Soy sauce, 1 Tbsp Vegetable Oil – for marinating the chicken
For Tofu:
- 300 gms Extra Firm Tofu (Korean tofu recommended)
- 1 tsp Sesame Oil, 3/4 tsp Sea Salt flakes – crushed, 1/2 tsp Chinese 5-spice, 1/4 tsp White Pepper, 2 Tbsp Cornflour(corn starch)- for marinating the Tofu
Sauce:
- 4 Tbsp Oyster Sauce
- 2 Tbsp Light Soy Sauce
- 2 tsp Dark Soy Sauce
- 2 tsp Thick Sweet Soy Sauce (Kicap Manis)
- 3 tsp Thai Golden Mountain Seasoning sauce (you may substitute with Maggi OR Knorr Liquid Seasoning sauce)
- 1 tsp Thai Fish Sauce
