Sulaimani tea is believed to have come into existence, following the Arab tradition of drinking hot, sweet ‘Ghava’ in ancient times. Ghava, however did not contain sugar or even tea for that matter! It was made with dates and black pepper. With time, the drink kept changing and was introduced to the southern Malabar Coast of Indian by the frequent Arab traders. There is huge Arab influence not only in the cuisine of the Malabar region but also culturally. Borders seemed to melt and languages and cultures mixed to create lots of famous mouth watering food here. Sulaimani Tea , Sulaimani Chaya (Chai) or simply ‘ Sulaimani ‘ took the traditional drink, that had already changed substantially over time, added some spices and tea leaves to create what would turn out to be a symbol of culture – the Sulaimani. It was a name given by the locals, honoring their friendship with the Arabs that had become a part of their society. ‘Sulaiman’ , in Arabic translates to “Man of Peace” Today, the Sulaimani is known as a digestive beverage, expecially after heavy meals. It is extremely common to have a hot cup, after having a delicious Mappilah Muslim Biryani, here. The Mappilah’s are the Muslim community of the Malabar region, that also has some Arab ancestory, now after centuries. The drink is even an essential item on Marriage menus in the area. The popularity of Sulaimani soared in recent times, after the Movie, ‘Ustad Hotel’ in a scene where Grandfather bonds with his Grandson. They both happen to be chefs of different very different generations. Over a cup of Sulaimani, the grandson is curious about what special spice has been added to this tea, since he is obviously quite taken with it. The grandfathers loving reply ,“Oro Sulaimanilum oru ithiri Mohabbat venam. Adhu Kudikumbol, logam ingene padhukazhai vanu nilkenam.” Translation: “Every Sulaimani requires a bit of Mohabbat (love) in it. When you drink it the whole world should slow down and come to a standstill.” Here, I am sharing my method of making Sulaimani. There are quite a few versions, but this one is pretty good.
