New Zealand Chocolate Cake

This New Zealand Chocolate cake recipe is so simple and gives a perfect chocolate cake every-time. It is moist and has the perfect texture. We love that it requires only 1 egg and a 1/4 cup butter so its quite economical too!!

Easy Chocolate cake using only one egg.

Ingredients:

  • ¼ cup/50 g butter
  • 1 Tbsp golden syrup or use Maple Syrup
  • 1 egg
  • ½ cup /100 gms sugar
  • 1 Tbsp cocoa powder
  • 1 cup/ 137 gms flour
  • 1 tsp baking powder
  • ¼ tsp vanilla essence
  • 1 tsp baking soda
  • ¾ cup /177.75mL milk

For Cream Icing

  • 5 Tbsp brown sugar
  • 5 Tbsp cream
  • 2 Tbsp butter
  • 3 squares of your favorite chocolate


Method:

Flour into batter

  • Pre-heat oven to 190º c/375 ºF
  • Grease and sprinkle flour in an 8 “/20cm round cake . Shake of extra flour.
  • Melt butter and syrup in a small saucepan.
  • Sift cocoa, flour and BAKING POWDER together.→ set aside
  • Dissolve BAKING SODA in milk.→ set aside
  • Whisk egg and sugar well till light lemon yellow color.
  • Add the melted butter mixture to the whisked egg and sugar  and whisk again.
  • Fold in the dry, sifted ingredients into the egg mixture till incorporated.
  • Next Fold the milk mixture into the egg mixture  till smoothly incorporated.
  • pour mixture into prepared pan and bake for 30 minutes or until cake springs back when lightly touched.
  • Allow to rest in the tin for 5 minutes, then turn out onto wire rack.
  • You may add the cream frosting while warm or wait till cool.

Cream Icing:

  • In a small saucepan, combine the butter, sugar, cream and chocolate→ Boil 2- 3 minutes till thickened and pour over the cake. Sprinkle chocolate shavings atop.

Notes:

  • You  may add nuts to the batter. you may also  choose other toppings over the icing.
  • This cake is perfect served with vanilla icecream. We use chocolate sauce and nuts to top our icecream.
