Mutta Roast – Kerala Egg Roast for Appam – The irresistible Kerala Combo!

If you have ever visited Kerala, you have probably been introduced to this popular breakfast item. Kerala Appams with Mutta Roast. Kerala style egg roast is good with Idiyappam or Puri as well.

If served with Appams or Idiyappam, I prefer to have them with light coconut milk (served on the side). The spice, sweet and tangy notes hit all the right spots just right. I have another more tart version with a stronger ginger flavor here.  The recipe below, however, is less sour and typical of the teashops in Kerala. This is how my mom makes it and I love it!

The main ingredients are Onion, Tomato, Spices and of course Eggs!

Some key points, to making a good Mutta Roast | Kerala Egg Roast for Appam (Egg Masala Roast):

  1. *Use homemade coarse ground coriander powder – by dry roasting coriander seeds and then grinding them, so that it makes a course spice powder and not a fine one. The aroma of freshly roasted coriander and the coarser grain makes a huge difference to the authenticity of this dish.
  2. Coconut oil – of course, nothing is ‘Nadan’ without our beloved coconut oil
  3. Cardamom, Clove, and Cinnamon – in the exact measurements in my recipe.. too much is not needed.. but the little bit added makes a good impact on the flavor.
  4. Don’t use large tomatoes. As a general rule, you want half the amount of tomatoes as you have onions. Or slightly less than that. The tomatoes are required to add a slight tang but careful not to make the masala too sour.

Recipe at a glance:

  • Boil Eggs. Assemble ingredients and Prep.
  • Dry roast and powder the coriander seeds.
  • Slow cook the onions and fresh ingredients till soft and golden.
  • Precook the tomato in the microwave and add to the sauteed ingredients.
  • Add and cook the spices.
  • Loosen as needed and add the eggs.
