Medovic – Russian Honey Cake

The ‘Medovic’ is the Russian Honey Cake, A labour of love, but with this recipe, you can get fantastic results. 10 Super thin semi-Biscuit like sponge cake layers held together with a whimsical Whipped cream topping, flavoured with Dulce de leche (caramel) and ‘Burnt Honey’… Yes, the honey is purposefully burnt or caramelized in this recipe, providing a unique flavour. I am not a fan of honey, yet I love this.

If you love, gingerbread, graham crackers, dulce de leche and whipped cream… this cake combines everything.

So the Medovic / Meodvik is a Slavic layer cake which is quite popular in the countries of the former Soviet Union. The key ingredients being Honey and Condensed milk.




Well known for its lengthy preparation time, the process is actually quite fun if you ask me.  It consists of layers of semi biscuit-sponge cake with a cream filling. It is often covered with nuts or crumbs made from the cake layers.  These thin layers need to soak in the moisture of the cream to soften, so a long chilling time is required. There are several variations on this cake, some calling for the use of condensed milk, buttercream or custard. Originally, sour cream was used with the honey.

Apparently, the cake was created during the 19th century Russian Empire by a young chef, for Empress Elizabeth, wife of Emperor Alexander I..  She was known to dislike honey and be angered with any dish that contained it. However, the young and new confectioner was unaware of this, and he made for her a cake, with honey and south cream! The Empress took the dish very keenly, falling in love with it. Medovic, as a result, gained intense popularity during the Soviet Era.

I tried several variations to this recipe and am sharing the one I liked. I also recommend trying to replace the whipping cream in the frosting with sour cream. Both are delicious!

How to make Medovic – Russian Honey Cake – Recipe at a glance:

  1. Caramelize some of the Organic Honey, and place in a water bath to stay in liquid state.
  2. Measure out all ingredients for the cake layers.
  3. Prepare the biscuit sponge dough/batter and roll out into 11-12 9 inch rounds.
  4. Bake the layers, for a brief period and set aside to cool.
  5. Prepare whipped cream with burnt honey and dulce de leche, you can also use sour cream.
  6. Use frosting in between layers as well as top and sides.
  7. Decorate with extra cake crumbs, nuts.
  8. Chill overnight or 24 hours.

Ingredients:

  • 1 1/2 cups Raw (unheated) wildflower Honey. Try to get honey that is dark amber in colour.
  • 6 large Eggs, at room temperature
  • 2 1/2 tsp Baking soda
  • 3/4 tsp Ground cinnamon
  • 3/4 tsp Salt plus
  • 3 3/4 cup All-Purpose (unbleached) flour
  • 200 gms Unsalted butter, cut into cubes
  • 1/2 cup light brown sugar

Whipped Cream/ Sour Cream – Dulce de Leche – Burnt Honey Frosting:

  • 1-litre Whipping cream OR Light Sour Cream ( both create a different appeal)
  • 1/2 cup Dulce de Leche (Caramel Sauce) – see notes

Equipment you will need for Medovic – Russian Honey Cake:

  • Greaseproof Baking Paper.
  • 3 large Metal Mixing Bowls. 2-3 medium and smaller bowls. Heatproof measuring cup. Measure cups and spoons.
  • 3 saucepans (2 medium and 1 small). After baking cleanup is required, only on one of these saucepans. The other two only hold hot water.
  • Measuring Ruler/ Scale.
  • Flour Sifter.
  • Offset spatulas, cake scrapers, turntable.
