Masala Dosa | Spicy Potato Filling | Aloo Bhaji
This is the tasty, spicy potato filling for Masala Dosa, also known as Aloo Bhaji. So simple to make, this filling may be used as a side dish with Puris as well. I love plain crispy dosas with chutney and sambar. On some days, however I will feel like having Onion Dosas or Masala Dosas. After all, Variety is the spice of life!

Ingredients:
- 4 onions (200 gms), sliced
- 4 green chillies (hot) or 2 long mild green chillies, chopped
- 3 large potatoes: boiled, peeled and roughly mashed
- ¾ tsp mustard seeds
- ¼ tsp turmeric powder
- a handful of fresh coriander, chopped
- 10 curry leaves
- 4 Tbsp ghee
- ½ tsp fresh juice of lime
- salt to taste
- 300 gms prepared Dosa batter
Method:
- Heat Ghee in non stick pan. Add mustard seeds and allow to splutter.
- Add and sauté onions. Also add turmeric, green chili and curry leaves.
- When onions are soft, add the roughly mashed potato and mix well.
- Add salt to taste, lime juice and fresh, chopped coriander leaves. Fold in without over mashing the potato.
- Prepare crispy dosas as usual. Divide the filling into 4 parts.
- Place filling in centre of dosa when it is almost done. Fold over and serve hot with Coconut Chutney and Sambar.

- Potatoes should be boiled tender and mashed but retain some texture. We don’t want creamy mashed potatoes.
Key Ingredients: Potato, Onion, Lime, Turmeric, Coriander, Curry Leaves, Ghee, Salt.
