Mandi Spice Mix can be used to marinate your chicken or flavour rice for Mandi Rice dishes. Very little of this spice mix is needed as, it is a robust and strong blend. I would use only 2 tsp for 1 kg of Chicken. Turmeric, Ginger, Garlic, Tomato paste and lime/dried lime, must be added to taste during cooking.

This recipe makes a small quantity of spice mix. It can be doubled as required.

Ingredients:

  • 6 Tbsp coriander seeds
  • 3-4 Tbsp Green Cardamom
  • 1 small Nutmeg, broken (1 tsp)
  • 1- 2 Tbsp Cloves
  • 5 Bay Leaves
  • 1 Tbsp black peppercorns
  • 3 cinnamon quills, broken
  • 6 tsp cumin seeds
  • 6 dried red chillies (mild)

Method:

  • Add all spices to a heavy based pan/ skillet.
  • Heat and stir continuously till, aromatic. about 3 minutes.
  • Remove from heat.
  • Add to spice grinder and process to a powder.
  • Store this fantastic aromatic spice in small airtight jars. A little goes a long way.
  • Turmeric MUST be added to the spice mix only during the cooking process. Add as required. About 1/8 tsp Turmeric : 1 Tbsp Mandi Spice. mix.

Notes: 

  • You can add upto 1/2 Tbsp of garlic powder or dried garlic flakes, to this recipe. I just use fresh garlic and ginger paste instead.

Key Ingredients: Mixed Spice.
