Malaysian Sambal Chicken (Malaysian Chilli Chicken)
Ever tried the Malaysian version of Spicy, Lightly sweet Chilli Chicken? It is delicious served with plain steamed rice or ghee rice. The chicken pieces are marinated and partially fried before being cooked along with the sambal sauce ( the freshly made paste, consisting of chillies and tomato). My kids love Sambal chicken, and I make it for them when they are home for lunch. Usually, the sambal sauce is cooked very slowly in a good quantity of oil. You can always reduce that amount of oil and keep sprinkling water to avoid the paste from burning during the long cooking process. It is a thick gravy coating the tender, moist chicken, but it is just enough to whet your appetite for more.
