Malappuram Mandhi – a simple version of Arabian Chicken Rice, popular in the Malabar region.
This is an easy to make, Arabian inspired rice dish that is made popular, in Malappuram a district in the Southern Malabar region. Bounded by the Nilgiris hills on the East and the Arabian Sea on the west, the district of ‘Malappuram’quite literally the land atop the hills, is remarkable for its unique natural beauty, and popular food.
I love that it is so easy to make, although you do have to be careful. Stepping away from the kitchen while the rice is cooking is a strict no-no. It’s simpler than most Arabic Rice dishes and more flavoursome.

How to make Malappuram Mandhi- Recipe at a glance:
- Marinate the chicken with specified ingredients for 1 hour.
- Soak the rice for 10 minutes and drain.
- Cook the rice with sauteed ingredients.
- Very briefly steam the marinated chicken and cook in a tight pot with the rice for 30 minutes.
Ingredients:
- 1 1/2 kg chicken pieces ( skinless, with bone, cut into medium-sized pieces or larger if you prefer )
- 4 cups Basmati rice
- 4- 5 Tbsp Sunflower oil
- 4 Tbsp Spring Onion White bulb portion
- 3-4 Tbsp Finely chopped Green Capsicum
- 4 tsp Ginger, minced
- 4 tsp Garlic, minced
- 1 chicken bouillon/stock cube (I use Knorr)
- 7 1/2 cups water
- 2 1/2 tsp salt
- 1 dried black Arabic lime / Loomi
- 10 small, hot green chillies, stem intact
To Marinate the Chicken:
- 2 chicken bouillon/stock cube (I use Knorr)
- 2 Small sticks of cinnamon
- 8 Cloves
- 7 Green Cardamom pods
- 1 Tbsp Black peppercorns ( a vital ingredient)
- 3/4 tsp Cumin seeds
- 1 tsp bright Red chilli powder (see notes)
- Just less than 1/4 tsp Turmeric powder
- 1/4 cup Sunflower oil
