Malabar Chicken Dum Biryani – Famous throughout Kerala, for its mouth watering flavor.
The Malabar region refers to the historic and geographic area of southwest India, covering the state of Kerala along with Kanyakumari district, Tulu Nadu and Kodagu district It lies between the Western Ghats and the Arabian Sea.
The cuisine of Malabar quite distinct throughout Kerala. Hugely impacted through the flavours influence of Arab settlers. Kozhikode and Thalassery are known as the centres of Malabar cuisine. Malabar cuisine consists of a plethora of vegetarian as well as non-vegetarian dishes that carry its distinctive flavour and aroma.
Malabar Biriyani (mutton, chicken, lamb or prawn) tops the list of delicacies. The ‘dum’ preparation is used to cook it where heat is applied both to the top and the bottom of the cooking vessel. This can be done in the conventional oven at home, or with live coals on top and bottom, for best results.
I have also shared the Thalassery Chicken Biryani, which is the Queen of the Malabar Biryanis, with some essential ingredients and techniques involved. Here, we prepare a more versatile, but still extremely delicious Malabar Chicken Dum Biryani.
Here, we cook the rice till it is 3/th cooked in spiced stock. The rice is drained and added over the masala and meat which is prepared in a separate pot. The rice will be further cooked after sealing the pot in the ‘dum method of traditional Biryani making;’. Of course, you can pop it in the oven if you like as well.

Method in brief:
- Marinate chicken.
- Rinse and Soak Rice, then drain.
- Prep ingredients.
- Fry ingredients for garnish.
- Cook Masala
- Par cook rice in stock water and drain when 3/4th done.
- Layer the Masala and Rice and seal the pot. Cook.
