This bejeweled rice is the favorite of many! A delicious Malabar Chicken Biryani! Although the ‘Hyderabadi Dum Biriyani’ may be tagged as ”The most famous Biriyani “, I know many Kerala food enthusiasts will make a good argument to the contrary. Kannur, Thallessery, Kozhikode Biriyanis are indeed sought after and devoured with passion. Recipes are varied but this one is a keeper! A delicious and fulfilling recipe! It is lighter and simpler in flavours, with fried sultanas and cashew nuts, along with crisp golden onions for garnish.

How to make Malabar Chicken Biryani Recipe – Recipe at a glance:

  • Marinate chicken.
  • Fry the Garnish Ingredients.
  • Cook the Rice with ghee and spices.
  • Cook the Masala, add the marinated chicken.
  • Follow the ‘dum method’ of sealed steam cooking to cook the meat masala and cooked rice together.
  • Gently mix the delicate rice and cooked masala, according to the recipe and enjoy a delicious Malabar meal.

Ingredients:

  • Chicken – medium-sized pieces (weight after skinning and cleaning – cut medium size) 2 kg
  • Red onions, sliced 7
  • Garlic cloves( smaller sized Indian Garlic variety ) 1 cup
  • Ginger 3/4 – 1 cup
  • Small hot green chillies ( around 6) 50 gms
  • Tomato chopped 1/2 kg
  • Coriander leaves 1 large handful
  • Mint leaves 1 large handful
  • Pandan leaves 2
  • Dalda/ Vanaspati (Hydrogenated vegetable oil) 100 gms
  • Coconut oil 1/2 cup
  • Ghee/ Clarified butter 1 Tbsp
  • Coriander powder 5 tsp
  • Kashmiri chilli powder 2 tsp
  • Turmeric powder 1/2 tsp
  • Kerala garam masala (SEE NOTES) 2 tsp
  • Salt (to taste) 2 tsp
  • Thick yogurt, whipped 1/2 cup
  • Lime juice ( if needed ) 2 tsp
  • Milk 1/2 cup
  • Saffron 1 tsp
  • You will need to make a dough to seal the lid of the pot. 1- 2 cups of wheat flour mixed with water to make a soft pliable dough

For Marinating the Chicken:

  • Coriander powder 4 tsp
  • Chilli powder 2 tsp
  • Fennel powder 1 tsp
  • Black pepper powder 1 tsp
  • Turmeric powder 1/2 tsp
  • Green Cardamom powder 1/2 tsp
  • Thick and sour yoghurt 3 Tbsp
  • Lime juice 2 tsp
  • Mint leaves, chopped 3 Tbsp
  • Coriander leaves, chopped 3 Tbsp

For Rice:

  • Basmati RICE ( 5 1/2 cups ) 1 kg
  • Water 4 litres
  • Salt 4 Tbsp
  • Sticks of cinnamon 3
  • Star anise 1 Tbsp
  • Green cardamom 5
  • cloves 5-6
  • Fennel seeds 1 tsp

Garnish:

  • Fried cashew nuts 1/2 cup
  • Fried raisins/ sultanas 1/4 cup
  • Chopped coriander As needed
