Lemon Cloud Pie – Tangy Sweet Pudding

A lovely pudding textured pie, that requires no baking. The lemony scent of the sweet pudding paired with a biscuit crumb crust makes it a delectable dessert. Check out the VIDEO.

If you love cheesecake, you will find this to be a great option MINUS the cream cheese. My mom used to make this as a weekend dessert, when I was growing up and I continue to make this every now and then.  Easy as pie to make. It does require to be chillied for some time before using though, so make ahead of time.

Here, instead of using the usual Graham Cracker pie crust, we use Ritze crackers to make the crust. The salt paired with butter, sweet and sour notes, really works well!

How to make Lemon Cloud Pie – Tangy Sweet Pudding- Recipe at a glance:

  • Chill Evaporated Milk
  • Process biscuit to crumbs.
  • Make thickened Jello water.
  • Make Vanilla sugar.
  • Add butter to biscuit crumbs and press to make pie base. Chill well.
  • Mix the Jello water with Vanilla Sugar.
  • Beat the crystalized evaporated milk till slightly stiff and thenmix it in with Jello-Sugar Water mix.
  • Pour filling over chilled base. Top with remaining crumbs. Chill overnight for best results.

Ingredients for Lemon Cloud Pie – Tangy Sweet Pudding

  • 1 can evaporated milk (395 gms)
  • 300 gms Ritz original crackers
  • 3/4 cup unsalted , melted butter
  • 1 cup water
  •  1 Pack (90 gms) of Lemon Jello
  • 1/2 cup sugar
  • 1 tsp Vanilla bean paste or extract
  • 3 Tbsp freshly squeezed lemon juice (Do not use concentrate or essence).
