Kerala Style Rasam
Recipe from Jayamma Chechi
Rasam is a spicy tamarind-based soup, that is often served as a drink – along with rice. It may be poured over the rice as well. It’s great if you have a cold. There are so many varieties of Rasam, using different souring agents, spices and vegetables. Today I am sharing my favourite Kerala style Rasam. This recipe is one I got from Jayamma, who runs a home-based roadside hotel, that serves only one meal a day (Lunch) and she has so many customers every day. She was kind to share her tasty Rasam recipe with me since I was never satisfied with my Rasam Recipe. It’s a keeper!

How to make Kerala Style Rasam – Recipe at a glance:
- There is actually a secret to making perfect Rasam. It’s all about stopping the cooking process at the correct time.
- Crush ginger garlic and spices and set aside. Prepare tamarind solution.
- Saute ingredients in sequence and cook tomatoes, adding spices as suggested.
- simmer add tamarind and jaggery, asafoetida for balance. Season correctly.
