Kerala Green Peas Masala – Restaurant-style curry goes well with Porotta
This Kerala Green Peas Masala, is especially tasty! Y’know those restaurants that serve green peas with porotta.. It’s so good, and we have a hard time replicating that taste at home. Well, this recipe is pretty darn good, and not so difficult to make!
The texture is key. You don’t cook the green peas in water, instead, you cook the peas inside a separate bowl in the pressure cooker. Try it, it makes all the difference. The light marination of sorts, also adds to the flavor. Don’t let me scare you off though. It really is a simple recipe! If you like it, please do let me know! How to make Kerala Green Peas Masala – Restaurant style curry- Recipe at a glance:
- Soak Green peas overnight
- Pressure cook the dal as specified in the recipe.
- Prepare a simple ground paste of ginger garlic and dal.
- Slice Onions, Tomatoes.
- Saute fresh ingredients, adding spices and the ground paste. Add the cooked dal and simmer.

- How to keep the Green Peas green after cooking? Many times we find that cooking dried green peas, makes them look dull and lose their green vibrant color. It has happened to me many times. I found that some packages of dried green peas cook greener than others. So it won’t hurt to try a few different brands.
- Fresh/ Frozen peas can be cooked with 1 tsp sugar and 1 tsp salt, to retain that green color, but it doesn’t always work the same for dried green peas.
- Baking Soda (Sodium bicarbonate )added to the peas during the soaking stage, helps retain color and, and also softens their skins, allowing them to absorb the soaking water. However, for this curry, I prefer to only add the baking soda, during the pressure cooking method.
- Adding the baking soda and light marination ingredients helps to get the correct texture while helping to inject it with flavor right from the get-go.
- Although not a must, I really find that I LOVE how the Maggi Magic cubes, add more taste satisfaction to this recipe. I use the Vegetarian Masala Maggi Magic cubes. See the notes section on the Recipe page, for and instant homemade substitute.
- You may also substitute with half a stock cube in place of Maggi Magic cubes, but I recommend using vegetable stock and not chicken stock. That’s a different flavor altogether. Always add salt with precaution, when using stock cubes or granules.

Ingredients:
To cook the Green Peas:
- 1 cup dried green peas, soaked overnight(6-8 hours)
- 1 Maggi Magic cube (Veg Masala) – See notes for a suitable substitute
- 1/2 tsp dried Mint leaves
- 1/4 tsp Baking soda
- 1/4 tsp Salt
- 1 tsp Ghee
- 1 scant tsp Sugar
For the Green Peas Masala:
- 2 medium-sized Red onions, sliced
- 2 medium-sized ripe and firm tomatoes, sliced
- 3 small green chillies, slit
- 1 generous Tbsp fresh Garlic, roughly chopped
- 1 Tbsp fresh Ginger, roughly chopped
- 1 1/2 Tbsp Puffed Bengal Gram – see notes
- 1 tsp Ghee
- 2 tsp Coconut oil
- Pinch of mustard seeds
- 1 1/2 tsp Kashmiri Chilli powder
- 1 tsp Coriander powder
- 1/4 tsp Turmeric powder
- 2 Pinches of Black pepper
- 1 Maggi Magic cube (Veg Masala) – See notes for a suitable substitute
- 1 1/2 tsp Mutton Masala powder (store-bought or check my recipe)
- 1 Tbsp thick set Yoghurt, beaten
- 1 Sprig Fresh Curry leaves
- Salt to taste
