Kannur Style Varutharacha Chicken Curry

‘Varutharacha’ refers to curries or gravies, where a spice blend is added to grated coconut and roasted together till the coconut is golden and crisp. This golden mixture is then pounded on stone or ground in a blender, to make a spice paste that forms the base of the Varutharacha Curry. In Indonesian and Malaysian cooking we find similar pastes using Rempah (spice paste) and Kerisik ( toasted coconut paste).

Different regions have their own heirloom and secret recipes to make these types of curry bases. In Kerala, Varutharacha curry also varies from region to region. This recipe for Kannur Style Varutharacha Chicken Curry is a recipe kindly shared by one of my Subscribers. He has generously shared his Grandmother’s authentic Kannur Chicken Curry recipe. I have many Malabar recipes on here and was excited to try this one. Must say that the curry was absolutely delightful with rich and luxurious flavours and aromas. How to make Kannur Style Varutharacha Chicken Curry – Recipe at a glance:

  • Toast the coconut and spices. Grind to a paste.
  • Marinate the chicken.
  • Sauté Onion Ginger and add the marinated chicken with spice paste, green chillies, tomatoes and specified spice and cook covered, adding enough water. Low flame for 20 minutes.
  • Open and add black pepper and curry leaves. Simmer a final 10 minutes. Done

Ingredients:

  • 1 kg Chicken, bone-in
  • 5 medium-sized Onions
  • 2 Tbsp fresh Ginger, crushed
  • 2 medium tomatoes
  • 4-5 Green chillies, slit through the middle
  • 1/2 tsp fennel seeds
  • 1 Clove
  • 2 Green cardamom
  • 2 small sticks of Cinnamon
  • 1 1/2 tsp Garam Masala (Use Kerala Garam Masala, see notes)
  • 1/3- 1/2 tsp Black pepper powder
  • A handful of Curry leaves
  • 4-5 Tbsp Coconut oil
  • 1 tsp Salt, or to taste

For Toasted Coconut Paste:

  • 2 Tbsp coconut oil
  • 200-250 gms grated coconut
  • 10 large cloves Garlic
  • 2 1/2 Tbsp Coriander powder
  • 2 1/2 Tbsp Chilli powder
  • 1/2 tsp Turmeric powder
