Kannur Style Pathiri – Vaatti Pathiri

Pathiri is a popular Muslim dish from Kerala. These are gluten-free flatbreads made of ground rice or rice flour. The version using Roasted Rice flour or Malabar pathiri which I have shared earlier is the most popular throughout Kerala. Pathiri is also called Pathil or Orotti in some areas.  It is an extremely popular recipe on my website and the video offers expert tips for those who are new to making pathiri.

This is Kannur Style Pathiri -Â Vaatti Pathiri, a special treat, in the district of Kannur. This area is famous for its delicious food preparations and hospitality. In Kannur when there is a marriage, the family goes all out to prepare A-Z of sought-after dishes for the Bridegroom. Referred to as ‘Puyyapilla Salkaram’ or Bridegroom Treat / Reception. Boys who marry into Kannur families are considered lucky, for the spread of traditional treats that awaits them!

Vaatti Pathiri includes a few extra steps from the Rice flour Pathiri, but the end result is just so soft, fragrant and melt-in-mouth delicious. It is slightly thicker than the rice flour pathiris, but still puffs up brilliantly and yields an altogether different type of softness. The use of Kaima rice, makes these pathiris, deliciously fragrant too. Many thanks to Subaida umma from Kannur who has helped me make these pathiris perfectly. The video is in Malayalam.

How to make title Kannur Style Pathiri – Vaatti Pathiri – Recipe at a glance:

  • Plan ahead of time. Soak the combination of rice in hot water for about 5 hours.
  • Grind to a smooth thick batter.
  • Leave to rest for 4 hours.
  • Pour ladlefuls of the batter onto a pan and spread like dosa or crepes. But cook only briefly on each side. It is just cooked till the batter becomes opaque and no longer sticky to touch.
  • Add the hot crepes into a bowl as they are done and pour small amounts of fresh coconut milk. Knead the crepes while hot, till it forms a dough.
  • Roll the dough into balls. Use a tortilla/ chapati press to the balls/ disks, flat and thin. You can use a cutter to get the edge perfect.
  • Roast the pathiris on a hot Tawa/ pan till puffed on both sides.
  • Dip in fresh coconut milk a while before serving with your favourite curry.

  • • 2 cups parboiled rice, such as Jaya rice (preferred). If you can not find this, you can use Parboiled Ponni Rice.
  • 1 cup Kaima rice / Jeerakasala
  • 2 cups freshly pressed coconut milk
  • Salt to taste
