Kalyana Veetile Biryani – Chicken Dum Biryani

In Kerala, people are passionate when it comes to Biryani. Each region may have its signature style of Biryani. Everyone may have their favourite type of Biryani, but something we all can agree on is that there is something especially delicious about ‘Kalyana Veetile Biryani’ (The Biryani at the Wedding House).

When weddings and auspicious occasions are held in homes, it is common to have caterers come and cook Biryani in large quantities in your backyard. Huge Biryani Pots and wood fires, Huge pots of water boiling for the rice, Kilograms of Meat marinated. Live coals atop the sealed Dum pots… it’s all rather exciting. Even the caterers who cater for weddings at reception halls, conduct a similar outdoor style of cooking.

We might not have wood fires and live coals at home, for the everyday Biryani, but this recipe will give you that fantastic, Dum Chicken Biryani, that you sometimes get the craving for.

This is true ‘dum’ Cooking, where raw marinated chicken is cooked under partially cooked rice in a sealed pot, till the chicken cooks on the bottom and the steam, aromas and flavours, rise through the rice, cooking it making it fragrant and irresistible.

I always try to try Biryanis from various regions, to recreate the taste at home. I don’t find it so hard to make Biryani. I know those who are just new to cooking may find it a daunting task. I try to lay out these recipes, extensively and with exact measurements so that you can not fail. I hope those who try the recipes, actually follow the recipe. I know some home cooks out there never follow a recipe accurately and end up getting varied results. Measurements and tips are given for specific reasons my dears!

How to make Kalyana Veetile Biryani – Chicken Dum Biryani- Recipe at a glance:

  • Marinate Chicken.
  • Cook Rice. Strain par cooked rice.
  • Fry onions and add marinated chicken. This is the Masala.
  • Layer Uncooked chicken masala and rice. Cook in sealed pot.
  • Garnish and Serve.

Ingredients:

  • 1 1/4 – 1 1/2 KG chicken (Use only fresh Chicken for Dum Biryani)
  • 1 kg Biryani rice  (Basmati or Kaima)
  • 3 Tbsp Vanaspati (Dalda)
  • 4 onions, sliced
  • 1/2 cup plus 1 Tbsp Ghee
  • 1/2 cup cashewnuts
  • 1/4 cup kismis/ raisins
  • 2 large red onions, extra finely sliced, using a madoline slicer
  • 2 Tbsp Biryani Masala powder (I used my Thalassery Biryani Masala powder )
  • 1/2 cup freshest Mint leaves
  • 3/4 cup fresh Coriander leaves
  • 1 tsp lime juice
  • 4 Tbsp rose water, divided

To Marinate the chicken

  • 1/2 cup(50 gms) Garlic (Indian)
  • 1/2 cup(50 gms) Ginger
  • 10 nos(15 gms) Small hot green chillies
  • 4 medium sized tomatoes, sliced very thinly
  • 1 cup thick yoghurt / greek style yoghurt (not too sour)
  • 1 1/2 Tbsp Fennel seeds and KasaKasa (White poppy seeds) – ground together to a powder
  • 1 Tbsp Coriander powder
  • 1/2 Tbsp Turmeric powder
  • Just over 1 tsp Salt

For the Rice:

  • 5 litres water
  • 4 Tbsp Salt
  • 7 cloves
  •  5 green cardamom
  • 1 stick cinnamon, broken into 3
