Kale and Pumpkin Quiche with Coconut Cream

This  Kale and Pumpkin Quiche with coconut cream is savory and appetizing and suitable for breakfast, lunch, or dinner. There are very few ingredients involved and although preparing the quiche does require baking and resting at intervals, which makes the total time longer, it really is quite simple to prepare if you have planned ahead. You can also prepare ahead of time to make this for breakfast. Lovely addition to the breakfast table if you have guests over.

This is a versatile recipe, that you can play with. A flaky, crisp crust, along with the wonderful flavor combinations of pumpkin and coconut cream, with the texture and added contrasting flavor of kale. Topped with cheese and baked to your liking. Even my kids loved this quiche.

How to make Kale and Pumpkin Quiche with Coconut Cream – Recipe at a glance:

  • Prebake the pumpkin half beforehand.
  • Make the dough for crust and chill.
  • Saute the baked pumpkin and prepare the egg and coconut cream-based pumpkin filling.
  • Roll our dough and ‘blind bake’ the crust.
  • Add the cooled filling into the cooled crust. Add toppings and bake till set. Rest briefly and serve.

Ingredients:

For the Filling:

  • 700 gms Pumpkin half (Japanese pumpkin is used here)
  • 200 ml Coconut Cream ( I use Kara coconut cream )
  • 40 ml Evaporated Milk
  • 5 eggs
  • 2 Tbsp Olive oil
  • 2 cloves Garlic, minced
  • 1 cup Kale, roughly chopped
  • 1/2 cup mild or smoked-grated cheddar cheese
  • Salt and pepper to taste
  • 1/2 tsp dried chives (optional)

For the Crust:

  • 1 13/4 cups Plain flour
  • 1/3 tsp Salt
  • 1 stick(113 gms)  of Cold, Unsalted Butter
  • ‘Egg Mixture’: 1 egg plus 1 yolk and 2 Tbsp Ice cold water
